Southwest Salad with Avocado Lime Dressing

Avocado Lime Dressing
In the bowl of a food processor add:
2 Cloves Garlic
1/2 Bunch Cilantro
1 Avocado
1/4 Medium Onion
3 T Lime Juice
2 T Cider Vinegar
Zest of one Lime
1 t Cumin
1/2 C Olive Oil
Salt to taste
Process until smooth.

Salad

1 8 oz Bag Spring Mix
1 Head Romaine, Cut into bite size pieces.
1 Can Black Beans, Drained
1 Can White Corn, Drained, Can use fresh corn if in season!
2-3 Scallions, chopped
1 C Jicama, Chopped
Grilled Chicken, Roasted Chicken or Shrimp also great in this salad! Toss and serve!
