Cauliflower with Cilantro Lime Pesto

This recipe takes cauliflower to new heights!
It is soo good! This pesto can be used in
so many ways, experiment! xo

lb Cauliflower Florets
1 Jalapeno Pepper
2 Cloves Garlic
Juice & Zest of 1 Lime
1 Bunch Cilantro, without stems
1/4 C Olive Oil
1/2 t Salt
1/2 t Pepper

Steam cauliflower. In the bowl of a food processor add jalapeno, garlic, lime, cilantro, olive oil, salt & pepper. Process until resembles pesto. Toss with hot cauliflower, salt & pepper to taste. Drizzle with olive oil and serve.
